One-Pan Lemon Herb Chicken with Roasted Broccoli

Ingredients:

4 Boneless, skinless chicken breasts

1 Lemons, thinly sliced

2 Tablespoons olive oil

1 teaspoon dried oregano
-
1 teaspoon dried thyme

salt and pepper to taste

2 Broccoli crowns, chopped

Fresh parsley for garnish
Instructions:

Preheat the oven to 400°F (200°C).

In a large bowl, toss the chicken breasts with olive oil, oregano, thyme, salt, and pepper until evenly coated.

Place the chicken breasts on a baking sheet lined with parchment paper. Arrange lemon slices on top of each chicken breast.

In the same bowl, toss the broccoli with olive oil, salt, and pepper.

Spread the vegetables around the chicken on the baking sheet.

Bake for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.

Garnish with fresh parsley before serving.
