One-Pan Lemon Herb Chicken with Roasted Broccoli

Time - 30 Minutes

 

Ingredients:

  • 4 Boneless, skinless chicken breasts

  • 1 Lemons, thinly sliced

  • 2 Tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • salt and pepper to taste

  • 2 Broccoli crowns, chopped

  • Fresh parsley for garnish

Instructions:

  • Preheat the oven to 400°F (200°C).

  • In a large bowl, toss the chicken breasts with olive oil, oregano, thyme, salt, and pepper until evenly coated.

  • Place the chicken breasts on a baking sheet lined with parchment paper. Arrange lemon slices on top of each chicken breast.

  • In the same bowl, toss the broccoli with olive oil, salt, and pepper.

  • Spread the vegetables around the chicken on the baking sheet.

  • Bake for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.

  • Garnish with fresh parsley before serving.
